• 4 firm peaches, pit removed and cut into quarters (you can leave the skin on)
  • 2 tbsp unsalted butter
  • 1/4 cup light brown sugar
  • 4 generous cups of vanilla bean ice cream
  • 2 tbsp whole milk
  • 1 tsp vanilla extract
  • 1/4 cup southern comfort

Melt the butter in a saucepan on medium high heat
Add the peaches and sugar and stir all together, heat on medium high for 8 minutes, stirring occasionally, until peaches are softened, caramelised and slightly browned.
Transfer the peaches and all the juice into a bowl, leave to cool completely.
Put all the ingredients into a blender and blend until smooth. Add more milk a couple tbsp at a time if you desire a thinner consistency
Pour into glasses and serve immediately
