• 1 Large Pineapple
  • Vegetable Oil for brushing
  • 1/4 cup soft brown sugar
  • 2 1/2 tbsp Rum
  • 2 tbsp lime juice
  • 3 tbsp small mint leaves
  • heavy cream, to serve

Preheat barbecue  grill plate to medium or mid level broiler. Quarter the pineapple. Oil the grill plate or broiler plate and cook for 10 mins turning to brown both sides. Cut the cooked pineapple into bite size pieces.

Combine the sugar, rum & lime juice in a small bowl mixing well to dissolve the sugar. Cover the pineapple with the mixture, cover the plate with plastic wrap and refrigerate for several hours.

Serve at room temperature, sprinkled wit hthe mint leaves and a dollop of heavy cream.
